Farmers Pizza

A twist (or total turn) on the typical pizza.  Cheddar and Arugula instead of mozzarella, Eggs instead of pepperoni, and Greek Yogurt (yes, that’s correct) instead of sauce.  As odd as this sounds, this might be your new favorite.

Pizza Dough (homemade or from your favorite pizzeria)

3 Eggs

1 cup Non-Fat Greek Yogurt

1 bulb of Roasted Garlic

3 cups of Fresh Arugula

10 oz Sharp White Cheddar Cheese

Olive Oil

Salt

Pepper

Farmers Pizza

Roll out the dough and place on baking sheet and drizzle with Olive Oil.  Combine the Greek Yogurt and Roasted Garlic; add Salt and Pepper to taste.  Spread the Greek Yogurt on the Dough and top with Arugula.  Very thinly slice the Cheddar and place on top of the Arugula.  Drizzle the pizza with a little more Olive Oil, Salt and Pepper.  Bake in a 350 degree oven for 7-10 minutes, check to see if the bottom of the pizza is just starting to brown.  Crack three eggs on the pizza and cook until the whites are cooked (approximately 5 minutes).
