Brie Summer Pasta

Cheese is the constant love of my life, a true life partner. There are times I try to break up with Cheese but that creamy, salty, sweet, deliciousness just keeps melting my heart. This dish takes my relationship with carbs and cheese  to the next level.  Best part about this recipe?  It can be made well ahead of time, served hot, cold, or room temperature, making it perfect for parties, picnics and late night eating!

1 pound of Penne Pasta
1 wedge of Brie
1 c. Basil
4 diced Tomatoes
3 cloves minced Garlic
1/3 c .Olive Oil
Salt
Pepper

Brie Summer Pasta

In a large bowl, combine the basil, tomatoes, garlic, olive oil, salt, pepper and diced Brie. Let sit for up to 8 hours until flavors combine.  Cook the pasta and drain. While the pasta is still hot, add the mixture and stir until the Brie is melted. Serve and enjoy!
