When the weather turns from hot to fire, you start to crave something a little lighter and more refreshing. This salad combines tangy Shrimp, sweet Mango, and creamy Avocado to satisfy your cravings but not tempt you to sit in your refrigerator.
4 Jumbo Shrimp
1/2 Mango
1/2 Avacado
2 cups Arugula
Olive Oil
Lemon Juice
Salt
Pepper
3 Tbsp. Smoky BBQ Dressing & Marinade
Grilled Shrimp with Mango & Avocado Salad
Clean the Shrimp (or cheat and buy cleaned Shrimp) and put in a bowl. Add 3 Tbsp of the Smoky BBQ Dressing & Marinade to the Shrimp and mix. On a hot grill (or grill pan) cook the Shrimp for 2-3 minutes or until opaque. While the Shrimp is cooking, place the Arugula on a plate and drizzle with Olive Oil and Lemon Juice, then season with Salt and Pepper. As the Shrimp slightly cool, slice the Mango and Avocado and assemble on the salad (add some lemon juice to the Avocado slices to keep them from browning). Plate the Shrimp on the salad and enjoy!
