Nothing brings you home like a decadent pasta dish. When you feel like splurging, this is one dish that is well worth it. Mushroom and Ricotta Pasta is the epitome of comfort food and could literally turn any day from bad to delicious.
1 pound of Fettuccine
3 cups of Mushrooms (a mixture of various kinds is encouraged)
2 cups of Part Skim Ricotta
4 cloves of Garlic
1/4 cup Fresh Chopped Parsley
2 Tbsp. Olive Oil
Mushroom and Ricotta Pasta
Cook the Pasta as directed in heavily salted water. While the Pasta is cooking, add the Olive Oil to a pan. Once heated, sauté minced Garlic and sliced Mushrooms until they begin to brown. Add the Ricotta to the pan an stir until it melts. Add the Parsley, Salt and Pepper to taste. Once the Pasta has finished cooking, add to the pan and stir together.
