Low Fat Vegetable Dip

It is that dreadful time of year again when you realize it is inevitable that you will be on a beach … in a bathing suit.  Have no fear! This low fat dip has no cheese, cream, or mayonnaise which makes it a healthy alternative for your backyard summer BBQ.  Though all the “fun” was taken out of this dip, trust me, this Low Fat Vegetable Dip is so flavorful that you wont even notice the fat it is missing!

1 Yellow Pepper

1 Red Pepper

1 package of Grape Tomatoes

1 Large Onion

3 Red Potatoes

3 Cloves of Garlic

1 sprig of Fresh Rosemary

3 Tbsp. Olive Oil

1 Tbsp. of dried Oregeno

Salt

Pepper

Low Fat Vegetable Dip

In a large pot, heat the Olive Oil.  Dice the Red and Yellow Peppers, Onion, and Potatoes and mince the Garlic and Rosemary.  Add the Peppers, Onion, Potatoes, Tomatoes, Garlic, Rosemary, and Oregano to the Olive Oil, season with Salt and Pepper.  Cook the mixture until the vegetables have completely softened (make sure you stir every few minutes to avoid any burning at the bottom of the pot).  Once everything has cooked, mash the mixture with a potato masher until it has reached the desired consistency. You could blend the mixture if you like it more creamy, I like the texture of having some larger pieces of vegetables in the dip.  Chill the dip and serve with your favorite chips or vegetables!
