Spicy Three Bean Chili


“New York’s hottest nightclub is: SPICY” – Stefon, SNL

Though this dish isn’t as hot as Stefon’s favorite club, this Chili is spicy!  Enough said, enjoy!

1 can of Crushed Tomatoes

1 can of whole kernel Corn

1 can of Black Beans

1 can of Red Beans

1 can of White Beans

4 large Carrots

1 large Yellow Onion

3 cloves of Garlic

1 Tbsp. Chili Powder

1 Tbsp. Cumin

1 Tbsp. Oregano

Hot Sauce to taste ( I use about a Tbsp. of Suicide hot sauce)

2 Tbsp. Olive Oil



Three Bean Spicy Chili

In a large pot, heat the Olive Oil.  Mince the Garlic, chop the Onions and Carrots and add to the heated Oil.  Let the vegetables brown slightly.  Add the Corn, and three types of Beans (drained and rinsed) to the pot and stir. Add the Crushed Tomatoes, Chili, Cumin, Oregano, Salt and Pepper as well as 2 cups of water.  Cover the pot and let cook until the Chili thickens.  Add the Hot Sauce, stir, and serve.  I like to garnish mine with some low fat Cheddar Cheese, Sour Cream, and Fresh Parsley.

  1. While this is recipe is a fine one and the dish tastes great, I myself am quite the carnivore. If you like to eat meat as much as I do, then I recommend adding a pound or two of ground beef. Or, if you can get your hands on some, add some ground venison (yes, that’s deer).
