Kielbasa Party Sub


The summer has finally arrived! To celebrate, my friends and I decided to have a picnic in the park!  For the picnic, a friend made the Fork It Speedy Sangria and one of the dishes I brought to the park was a Kielbasa Party Sub.   This large sandwich is an easy dish to make and travel with and is a total crowd pleaser!  The sandwich was definitely a success! My sunburn – not so much.

1 loaf of freshBread

1 package of Keilbasa

3 cups of fresh Arugula

1/4 c Dijon Mustard

1/2 lb. Provolone Cheese

3 Tbsp. Olive Oil

Sea Salt


Kielbasa Party Sub

Heat the oven to 350 degrees.  Slice the Bread, brush either side with the Olive Oil and season with Salt and Pepper.  Toast the Bread in the oven until lightly toasted.  While the Bread is toasting, heat 1 Tbsp of Olive Oil in the pan.  Slice the Keilbasa into 6 inch pieces and then slice in half.  Add the Keilbasa to the hot pan and cook on both sides until lightly browned.  Once the bread is toasted, layer the Provolone on one side and put back into the oven until the Provolone melts. Once the cheese has melted, add the Kielbasa and Arugula.  Spread the Dijon on the other half of Bread and top the sandwich.  Cut the sandwich into mini sandwiches and serve.
