The New Green Bean Casserole


Time for a twist on the old favorite! Don’t get me wrong, I love the typical onion, cream of mushroom soup, goodness of the traditional casserole, but here is a new twist on that dish! This casserole combines french cut green beans with the flavor profile of a cheese and nut dish!  Goat cheese, sweet and spicy walnuts, and some vegetables – sign me up!

Green Beans

1 lb. French Cut Green Beans

6 oz. Fresh Goat Cheese

8 oz. Sour Cream

6oz.  Milk

¼ c. Breadcrumbs




Sweet and Spicy Walnuts Topping (recipe in Balsamic Chicken Salad).

3 cups Walnuts

1/3 cup Brown Sugar

1/3 cup Canola Oil

2 Tbsp. honey

2 Tbsp. Maple Syrup

2 Tbsp. Cane Syrup

1 Tbsp. Red Pepper flakes

1/4 tsp. Cayenne Pepper


Green Beans

Preheat the oven to 350 degrees. Wash and cut the root side off the Green Beans and set aside.  In a medium sauce pot, combine Goat Cheese, Milk, Sour Cream and heat until melted together. Add a half of the bread crumbs, a dash of nutmeg and salt and pepper to taste. Pour the mixture over the green beans and sprinkle the rest of the Bread Crumbs on top.  Bake in the oven for 30 minutes, top with walnuts and bake for a remaining 20 minutes.
