Three Dish Dinner: Orange & Soy Glazed Salmon

I hope you have enjoyed this mini-series and have the chance to try this summer meal over the weekend!  Our final dish in the Three Dish Dinner  is The Main Course!

I can honestly say that I have never met a fish that I haven’t liked.  However, I can say that I can and will play favorites-Salmon.  For our Main Course in the Three Dish Dinner, we have an Asian inspired Glazed Salmon.  This super simple recipe will ignite your taste buds and pair perfectly with the Balsamic Citrus Brussel Sprouts! Summer is here, light up the grill, grab some friends and drinks (both are suggested but not required), and enjoy this meal!

1 1/2 pounds of Salmon

2 1/2 cups of Orange Juice (no pulp)

1/4 cup of Soy Sauce

3 cloves Roasted Garlic* (see recipe in Part One of the Three Dish Dinner)

Salt

Pepper

Orange & Soy Glaze

In a medium sauce pot, combine the Orange Juice, Soy Sauce, and Roasted Garlic and reduce until the mixture has the consistency of a syrup.  Set aside.

Salmon

Cut the Salmon into 4 servings and remove the skin.  Season with Salt and Pepper and very lightly brush the Salmon with the Glaze.  Place the seasoned side of the Salmon on a hot grill pan.  Season the other side of the Salmon and again, lightly glaze the remaining side.  Let the Salmon cook for about 5 minutes per side, adding additional glaze after each flip.  Drizzle the remaining Glaze on the Salmon and serve.
